...Tonks approaches his favorite subject in a variety of ways.  To him, wine is chemistry, it is history and it is art.  It is also a satisfying new career, producing and selling a variety of wines made mostly from fruits grown on his own property.  'This is agriculture' said Tonks.  'It's growing fruit and making use of that fruit.  We've decided to concentrate on  fruit wines.  To me, that's traditional winemaking in Vermont.  Everyone has a grandmother who made elderberry wine.'...
